To Our Young Men and Young Women:

As a stake presidency we welcome you to the Crestwood Kentucky Stake 2017 Pioneer Trek.
We commend you for making the decision and sacrifice to come on this trek. “I can do all things through Christ which strengtheneth me (Philippians 4:13) is our scripture theme. We have often spoken of the importance of being able to do hard things and we know that with the enabling power and grace from the Atonement we can do all things.

The goals of this trek are:

-To build unity amongst the youth of the stake and build new friendships.
-Increase your feelings for and connection to your ancestors.
-Learn from your family experience those things that will help you with your own future family.
-Feel an outpouring of the Spirit so that you will have that guidance later in life as you make
decisions regarding missions, temple marriage, etc.
-Learn to persevere during trials and know to turn to Heavenly Father for guidance.
-Know that Heavenly Father will help you with your burdens.
-Increase your appreciation for the hymns of the Church.

As you recognize Heavenly Father’s hand during this trek, particularly as you reflect upon these
goals, we invite you to record your feelings in this journal. You will then be able to remember
and draw upon these experiences when needed.

                                                 Trek Rules

The following are the rules of the trail.  They are very important for a safe, harmonious, and successful Trek.

Dress Code

The dress code is not to be compromised.  When everyone is dressed like a pioneer, a unique setting and environment is created.  All external barriers, images, cliques, pride, and popularity egos seem to be removed.  Use all skills necessary to enforce the proper dress code.

Acceptable Behavior


The family should remain together.  Youth should not switch back and forth between carts.

The use of ipods, cell phones, video games, and all other electronics are strictly forbidden.  We do not want your equipment to be damaged due to exposure.  Also, we want to ensure that everyone has a true-to-life pioneer experience.

Handcart Safety

The handcarts we are using approximate the size of actual pioneer handcarts.  They are not big toys with soft tires.  Fully loaded they will weigh several hundred pounds and have narrow wheels with very hard rims that can seriously injure feet, arms, legs, or bodies that get in the way.

While it is our objective to provide a realistic pioneer experience, we must do so in a way that does not expose our youth or adults to needless risk and danger.  We cannot foresee all the circumstances that will come up on the Trek, so common sense and good judgment are required at all times.

There are several areas where we foresee potential hazards.  To that end we require each family adhere to the following safety rules.

No pushing the handcart from the side where feet can easily get under the wheel.
When going uphill, the family needs to have an agreed upon plan for how they will get the cart up the hill, the route, and what each person’s job is.  No one is allowed to push from the back when going up hill.  Everyone will need to either push the handcart handle or pull on ropes attached to the front of the cart.
When going downhill, the family needs to have an agreed upon plan for how they will get the cart down the hill, the route and what each person’s job is.  No one is allowed to walk ahead of the cart when going down hill.  Everyone will need to help restrain the cart using ropes attached to the uphill end of the cart.
When going uphill or downhill, carts are not allowed to closely follow each other in the event that a cart gets away and starts rolling downhill.  This will give people downhill of the runaway cart time to get out of the way.

When leaving the handcart train or camp, the buddy system will be practiced.  No one is to leave without informing their family leaders and without their buddy.

Gloves must be worn when using ropes to pull or hold back handcarts.

The handcarts stop and start only when the Trail Boss indicates that it is time. The whole handcart train will stop together for breaks, and start again, together.

Watch for potential wear and breakdown on the handcarts. Avoid jarring the carts by going over large rocks or into holes. Also avoid pulling the handcarts on a slanted plane (i.e., where one wheel is consistently lower than another.) If all the weight of the handcart is shifted to one wheel, it may break.

Whenever a cart stops, it needs to be pulled as far as safely possible to the side of the trail to allow for passing vehicles. Put rocks behind the wheels or turn handcarts sideways on hills to prevent carts from rolling down hills.

Foot blisters must be reported to your family leader promptly. Treat blisters promptly and keep feet as dry as possible.


Sleeping Arrangements.  At the end of each day the handcarts will be put into a circle.  The females will sleep on the inside of the circle, and the males will sleep on the outside of the circle.  The male members of the family will be asked to arrange protection using the handcart and a tarp from which they can construct a lean-to.

Toilet Issues on the Trail.  Toilets--portable toilets (Port-a-Pottys) are provided for all participants and staff.  There will be formal potty breaks along the trail. Please wash your hands after each potty break.  During the course of the Trek it may be necessary for individuals to take care of personal needs along the trail.  When this happens make sure that the boys go in one direction and the girls go in another direction.

Trash.  “No Trace Camping” is the policy. “Pack it in, Pack it out” means that everything brought in must be taken out, including left-over food or peelings, cores, etc., charcoal briquettes, plastic and/or paper products, firewood, etc. All trash goes into trash bags so it can be hauled out. No trash is buried including food, briquettes, or plastic products. You may leave the trash bag at your campsite.  It will be hauled out by staff.  Please keep trash with you along the trail.

Water
Drink plenty of water during times when you are pulling the cart.  You will dehydrate faster than you think.  Do not drink water from the stream.  There will be breaks along the way, make sure you remember to drink your water.  If you don’t feel good, please let your Ma or Pa know.

Trek Notes:

All bolded items on the food menu have a recipe to follow.

The bag of dehydrated fruit is to be eaten mainly with meals and as you want.
The 1lb bag of jerky to be eaten mainly on the trail and as you want.
Wheat Chewing Gum. Each family has a bag of wheat to eat along the trek. Read the instructions with the wheat.
Use the honey on your biscuits but be sure to save ¾ cup for the ham.
To obtain 350ºF in a Dutch-oven, put 10 coal underneath and 14 coals on top of the oven. Replace coals as they diminish to maintain temperature.


World's Best Potato Soup

INGREDIENTS:
10 unpeeled potatoes, cubed
2 onions or 1 large, chopped
3 stalks celery, diced
8 cubes chicken bouillon
2 cups half-and-half cream
2 cups bacon (cooked – abt. 15 slices) which is 1-1/4 pounds bacon (raw)- cooked and crumbled
2 cans (10.75 oz) cream of mushroom soup
3 cups shredded Cheddar cheese
1 tsp pepper
DIRECTIONS:
In a large stock pot combine potatoes, onions, celery, bouillon cubes, pepper, and enough water to cover all ingredients. Bring to a boil and simmer on medium heat until potatoes are within 15 minutes of being finished (test softness of potato: if starting to soften it’s probably ready).
Drain off 1-2 cups of stock. This determines how creamy your soup will be. If you drain 2 cups, then your soup will be creamier.
Add half and half, bacon, cream of mushroom soup, cheese, and stir until creamy. Stir until the cheese is completely melted. Simmer on low until potatoes are done. Every 5min or so stir and scape bottom to keep form burning.
Serves 12
Biscuits in a 12” Dutch-Oven
INGREDIENTS:
2 packages of Complete Biscuits
water – per package instructions
DIRECTIONS:
Take a large piece of Heavy Duty aluminum foil (approximately three times the size of the bottom of the Dutch-oven) and crumple it up and then un-crumple it. Now fold it together to the size of the bottom of the Dutch-oven and press it into the oven. Make the foil level as possible and flip it.
The aluminum foil will create a buffer zone from the bottom of the oven and help in keeping from burning the biscuits.
Mix the packages together in a mixing bowl and add the water (per package instructions).
Make 2 ½” - 3” dough balls and place into oven. To minimize sticking, you can oil the aluminum foil surface and oven walls.
To cook, place 10 coals underneath and 14 coals on top of the oven. Cook until brown (approx. 20-25min).
Serves 12
Stew & Biscuits
Ingredients:

1 can, Dinty Moore’s Stew – 40oz
1 can, Dinty Moore’s Stew – 24oz
2 packages, Bisquick Complete
Directions:

Poor stew into Dutch-oven and begin cooking.
Mix 2 packages of Biscuit mix into a mixing bowl then add water as required on the package. Make dough balls and flatten slightly. There will be a baggie with flour you can use if needed.
After about 10 minutes of cook time of the stew, stir the stew and level. Place the flattened biscuits equally spaced on the top of the stew.
Cook until the biscuits are brown on top (approx. 25 minutes).

Serves 6


Peach Cobbler – 12” Dutch-oven

Ingredients:
1 29oz, can of Sliced Peaches in lite syrup
1 15oz, can of Sliced Peaches in lite syrup
1 box white/yellow cake mix
¼ lb of margarine (1 stick)
Cinnamon
Instructions:

Cover the inside of 12” Dutch with HEAVY duty aluminum foil.
Pour Large can of peaches into dutch oven with syrup. Open Small can of peaches and pour off syrup, then put peaches into oven.
Sprinkle generous amount of cinnamon on peaches.
Pour cake mix over peaches and level.
Slice margarine (~1/4” thick) and place on top of cake mix. It should be evenly space over the cake surface.



With 14 coals on top and 10 coals underneath, cook for about 35-40 minutes. If any coals get smaller than 1/3 their original size, add more coals to replace them. After the cobbler has been boiling and starts to brown, you can remove the coals from underneath the oven and keep the coals on top for 5-10 minutes more. This allows the top of the cobbler to brown more and become more crisp – DON’T BURN the cobbler.
Serves: 10-12

Honey Glazed Ham

8-10 lb picnic ham
1 can of caffeine free cola, (NOT diet cola)
½ to ¾ cup of Honey
Instructions:

The Ham is precooked and sliced so you will need to warm and glaze it as follows.
Put the ham into a 12” Dutch-oven. Use 10 coals on bottom and 14 coals on top of oven. Replenish as coals get small to maintain heat.
Now, cook the ham for about 25 minutes and remove all of the run-off liquid (if any) from the oven using a baster (sucking type).
Next, pour the Soda pop over the ham and cook. Baste every 15 minutes.
Cook until the core of the ham is 180˚ (usually about 1 ½ hours of total cooking time). When the glaze is thickening and the meat is warm in the center, pour honey over the top of the ham and baste.
When finished cooking, baste one last time and carve ham. Let ham soak in leftover liquid in oven before eating.
Serves 12
Cowboy Potatoes
Ingredients:

10 medium Potatoes, Sliced & halved
2 medium Onions, Chopped and Diced
2 cups (cooked) of Bacon, cooked  & Diced
1 to 2 cups Frozen Peas
Salt and Pepper to Taste
1 ½ cups of water
2 cups Cheddar Cheese, Grated
Instructions:
 
Mix potatoes, bacon, onions and water into a 12” Dutch-oven. Stir every 10 minutes. If you need more liquid, you may add more water as needed.
Add salt and pepper. Cook 35-45 minutes until potatoes are tender. Use 10 coals on the bottom and 14 on the top.
When potatoes are ready to eat, sprinkle cheese on top and recover for 5 minutes. Serve when the cheese has melted.

Biscuits in Aluminum Foil Pans
INGREDIENTS:
2 packages of Complete Biscuits
2 Square Aluminum Foil Pans, 8”x 8”x 1.5”
water – per package instructions
DIRECTIONS:
Take a large piece of Heavy Duty aluminum foil (approximately three times the size of the bottom of the pans) and crumple it up and then uncrumple it. Now fold it together to the size of the bottom of the pans and press it into the bottom of the pan. Make the foil level as possible and flip it.
The aluminum foil will create a buffer zone from the bottom of the oven and help in keeping from burning the biscuits.
Mix the packages together in a mixing bowl and add the water (per package instructions).
Make 2 ½” - 3” dough balls and place into pan. To minimize sticking, you can oil the aluminum foil surface and pan walls.
Using the other pan, cover the bottom pan. Be sure to bend both flaps downward to help the top lid to stay on the bottom lid. To secure lid better, cut ½” wide strips on opposite sides through both flaps and bend the top flap through the lower opening to lock the bottom and top together.
To cook, place 8 coals underneath and 10 coals on top of the pan, all equally spaced. Cook until brown (approx. 20-30mins).
Serves 12

Condition your feet!

Wearing the wrong shoes on the trek will rub you wrong and that means foot pain and blisters.
Remember, your toes need room to expand, because your feet will swell a full shoe size as you walk on the trek. So be sure to bring only comfy trekking shoes.
Running shoes are the best bet for trekkers because they are specifically designed for cushioning, motion control, and support.
Keep in mind that hiking boots do not provide motion control features that many people need, and may be inflexible and heavy.  And they are certain to rub you wrong!
 Since you  know that you will be trekking soon, try to do a couple of walks with your  trekking shoes and a light backpack. If, or when you feel hot spots forming, stop! Go home, rub your feet with rubbing alcohol and let them dry out. This should allow you to form calluses that can protect you on the trek.
To physically prepare yourself for the trek, here are some general guidelines:
Walk 4-5 times per week
For 2-3 times per week, walk 2-3 miles, and 2 times a week, walk 4-5 miles
About 4 times before the actual Trek, walk longer periods of time up hill.
